Chocolate Christmas with Mixed Fruit

It’s been a while…. Since I last posted I have given birth to baby #5! We also decided to homeschool our children last year, and this year also. So, needless to say, my recipes write ups have fallen by the wayside. But…. My beautiful baby boy, Jack, is now almost 6 months old and I feel as though I now have the time to get going again.

I was so excited to make these Chocolate Christmas with Mixed Fruit, because who doesn’t love Christmas treats?? I’m not a massive sweet tooth, but at Christmas time I do enjoy the spices that take centre stage in the treats.

This Chocolate Christmas with Mixed Fruit had everything that I was looking for. I decided to make it for gifts as a special blast from the past for my nearest and dearest. I especially relished gifting them to my auntie so she could enjoy the nostalgia of her mum’s recipe. She recently texted me asking if I would like the jar back for a refill next year lol.

Chocolate Christmas with Mixed Fruit
Ingredients
  • 3 cups Rice Krispies (Bubbles)
  • 1 cup desiccated Coconut
  • 2 cups chopped mixed fruit
  • 1 cup powdered (icing) sugar
  • 6 oz. (170 gms) Vegetable shortening ( Crisco or Copha)
  • 4 oz. (115 gms) cooking chocolate
Instructions
  1. Mix together Rice Krispies, coconut, mixed fruit, powdered sugar and powdered milk.
  2. Melt shortening and chocolate separately, in top of double saucepan; then mix together, making sure all ingredients are combined.
  3. Press mixture into greased shallow tin.
  4. Leave to set before cutting.
