Here’s a great recipe for delicious steak fajitas that you make right in the slow cooker. With just a few simple ingredients you can have a huge meal for the whole family.
This recipe uses flank steak, which is the perfect cut of meat for steak fajitas. Flank steak is a lean cut of beef from the underside of cow and is often confused with skirt steak. Flank steak does not have as much tough muscle fibers as skirt steak, which makes it even more succulent when slow cooked.
All you need for this recipe is a few bell peppers, an onion, the flank steak and a package of fajita or taco seasoning. You slow cooker is gonna do all the work. I like to use a variety of peppers including green peppers, yellow peppers and red peppers. Feel free to use orange peppers as well. The more colorful, the more flavorful. I usually use 2 green peppers as they tend to be less expensive and have that perfect flavor for steak fajitas.
I like to cook this recipe on high for 5-6 hours. That way the peppers still have a slight snap to them and the steak is tender but slices nicely instead of just pulling apart.
Be sure to serve these on nice and warm flour tortillas and have your favorite toppings such as cheese, guacamole, salsa or other toppings on hand and enjoy!
*Note: You do NOT need to add water. Moisture will naturally render from vegetables and meat.
- 1½ - 2 lbs of flank steak, trimmed
- 1 large yellow onion
- 1 or 2 green bell peppers
- 1 yellow bell pepper
- 1 red bell pepper
- 1 package fajita or taco seasoning
- Slice onion and peppers and place a layer of onion on the bottom of slow cooker
- Rub both sides of steak with seasoning and place on layer of onions in slow cooker
- Add sliced peppers and remaining onions to slow cooker, cover and cook on high 5-6 hours.
