Peanut Butter Slice

Who’s up for a super-easy tasty slice, made from staple, low-cost ingredients? Everyone?? I typically double each recipe I try from grandma’s recipe book, so we have enough for at least a couple of days and to share with neighbours, etc. This Peanut Butter Slice, however, didn’t even make it through 2 days. The kids demolished it! I guess it is the un-toppable combination of peanut butter and chocolate. Who doesn’t love this??

Another perk of this recipe is it’s a good way to use up the crushed Weet-bix at the bottom of the box that otherwise end up in the bin. With the current cost-of-living pressures, we can all use any little frugal hacks we can find. Add those crushed Weet-bix from the bottom of box to some sifted flour with the other dry ingredients and you’re half-way there. Melt the butters; combine. Bake; done. (That is if you don’t want to add a chocolate glace icing). We decided to add the icing and just looked up a recipe online. Peanut Butter Slice

Ingredients
  • 1 cup self-raising flour
  • 1 cup coconut
  • 1 cup crushed breakfast cereal biscuits
  • ¾ cup brown sugar
  • ½ cup sultanas
  • 2 tbs peanut butter
  • 5 oz. (140 gms) Butter

Instructions
  1. Sift flour into a basin.
  2. Add coconut, crushed breakfast cereal, brown sugar and sultanas.
  3. Melt butter in saucepan, add peanut butter; stir until combined.
  4. Make well in centre of dry ingredients, add butter mixture; mix well.
  5. Press into greased Swiss-roll tin, approximately 10½ in. (27 cm) X 12½ in. (32 cm)
  6. Bake in moderate oven 15 minutes or until light golden brown.
  7. If desired, ice with chocolate glace icing; cut into squares.
