This zesty sauce is packed with a lot of antioxidants. It lends a fresh taste to your oven-fried fish, too.
Ingredients
You would need the following:
¼ cup parsley or cilantro
¾ tsp salt
⅕ tsp ground black pepper
1 ¼ crushed tomatoes in puree
1 ½ tsp grated ginger
1 chopped onion
1 tbsp cooking oil
Instructions
Heat the oil over a medium heated pan. Then add in the onions and cook for 2 minutes.
Pop in the ginger and cook for 2 minutes. Then stir in tomatoes and salt, allow to simmer. You may sprinkle with black pepper to taste. Adding fresh cilantro or parsley on top will add a sweeter taste. Pour over your freshly baked fish!
