Coconut Slice

Ingredients
  • PASTRY
  • 3oz (85grams) butter
  • ¼ cup sugar
  • 1 egg
  • 1¼ cups plain flour
  • ¼ cup self-raising flour
  • TOPPING
  • 2 egg whites
  • 1 cup sugar
  • ½ teaspoon vanilla
  • 2 cups coconut
  • Raspberry jam
Instructions
  1. PASTRY:
  2. Beat butter until creamy, add sugar, but until just combined.
  3. Add egg, beat well.
  4. Add sifted flours; mix well.
  5. Press into greased 9in.(23cm) slab tin; prick lightly.
  6. Refrigerate 15 minutes.
  7. TOPPING:
  8. Beat egg whites until soft peaks form, gradually add sugar; beat well after each addition.
  9. Stir in vanilla and coconut; mix well.
  10. Spread a thin layer of raspberry jam over pastry.
  11. Spoon over coconut mixture, spread out evenly.
  12. Bake in moderate oven 25 to 30 minutes or until coconut topping is light golden brown.
  13. Allow to cool in tin.
