Tuna and Bacon Chowder
  • 7oz (200g) can tuna
  • 1lb (450g) potatoes
  • 10oz (290g) can whole kernel corn
  • 3 rashers bacon or ¼lb (115g) bacon pieces
  • 1 large onion
  • 2 cups milk
  • 2 cups water
  • Salt
  • Pepper
  • 1 tablespoon chopped parsley
  1. Peel potatoes, dice and cook until tender; drain.
  2. Cut bacon into small squares and fry lightly.
  3. Add chopped onion and cook until softened.
  4. Combine in saucepan potatoes, bacon, onion, salt, pepper, drained corn, milk and water.
  5. Bring to boil, cover and simmer on low for 15 minutes.
  6. Add drained, flaked tuna and heat through gently.
  7. Stir in parsley.
