Country Ham Recipe
  • 8 – 11 lb country ham
  • 3 cups apple cider vinegar
  • 1 cup brown sugar
  • 2 tbsp mustard seed
  • 10 bay leaves
  • 24 whole cloves
  1. Clean the ham surface thoroughly under running water, scraping any impurities with a stiff brush.
  2. Place the ham in a large pot and fill with enough water to completely submerge the meat. Soak for 24 hours, switching out the water every 6 hours.
  3. Add the bay leaves, mustard seeds, and apple cider vinegar to the ham. Bring the pot to a boil, then simmer over medium heat for 2 hours.
  4. Preheat the oven to 375F.
  5. Transfer ham on a roasting pan. Score the surface with a diagonal pattern, placing a piece of clove on each diamond. Rub brown sugar all over the ham.
  6. Bake for 45 minutes to 1 hour, or until the sugar has melted.
  7. Rest the ham for 15 minutes at room temperature. Slice paper-thin and serve immediately.
