- 4 bone-in pork chops, ¾ to 1 inch thick
- Olive oil
- Salt and pepper to taste
- Preheat oven to 400 degrees F. Lightly coat both sides of pork chops with olive oil and sprinkle with salt and pepper.
- Place a cast-iron skillet over medium heat on stovetop and let it get good and hot - about 3-4 minutes. Make sure you've got exhaust fan on. Place pork chops in hot skillet and sear on one side for about 3 minutes. They will be a nice golden brown. Now flip pork chops over in pan and place entire pan with pork chops directly into oven. Cook for about 6-9 minutes or until internal temperature of 140 degrees F.
- Remove pan with pork chops from oven and place pork chops on a plate and let them rest for about 5 minutes before serving.
