Mashed potatoes are so much more than just boiled potatoes all mashed up with some butter and salt. No no, by adding just the right amount of cream cheese, and using half and half instead of ordinary milk, you get a rich creamy flavor that is unlike any other mashed potatoes you’ve had before.

Country Cream Cheese Mashed Potatoes

Serves: 4 servings

Ingredients
  • 2 lbs of russet potatoes
  • 3 tablespoons butter
  • ½ half and half
  • 4 oz cream cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
Instructions
  1. Peel potatoes and cut into 1 inch chunks. Add to a large pot of boiling water. Add salt and potatoes to water, cover and cook 20 minutes or until potatoes are tender.
  2. Drain potatoes and return to the pot. Add butter, cream cheese, half and half and pepper. Use a hand mixer and mix until smooth.
