Every so often my kids get a hankering to bake. We flick through my Grandma’s recipe books or a kid’s cookbook to find something that will hit the spot. Preferably it will be something quick and easy to make, which will allow for plenty of spoon licking and a quick turn around before eating something delicious.
These Cinnamon Muffins fit the bill for us, and looked us if they would provide a tasty, homemade afternoon treat. Super easy to make, they are really just a matter of measuring and mixing the ingredients, and popping them in the oven. I am still getting used to my new oven, so ours were ready to take out of the oven after only 10 minutes. So keep an eye on yours so they don’t overcook.
I really enjoy the taste of cinnamon (which came through nicely in these muffins) and the added cream kept them moist. If you wanted to build on the flavours, a cream cheese frosting would take these muffins to the next level. Enjoy!
- ½ cup milk
- ½ cup yogurt or cream
- 4 tablespoons melted butter
- 1 egg
- ½ cup sugar
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 1½ cups all purpose (plain) flour
- Put dry ingredients into bowl and mix well.
- Add milk and cream, egg and melted butter.
- Blend well, do not beat.
- /3 fill muffin tins.
- Cook 15 to 20 mins in a moderate oven.
