Ok, so every family I know is looking for hacks to make dinner time preparation easier. If you’re one of these families, seriously look no further than this recipe. I’ve said preparation takes 2 minutes because I’m a methodical person, but for you it might take 1.
All you do is place the three ingredients, salt and pepper in a casserole dish and stir to combine. Whack on the lid, place the dish in a moderate oven and your work is done! All that is required now is time, so set your timer and forget about it. When the timer goes check that your apricot chicken is tender (ours was) and get ready to serve.
This Apricot Chicken Recipe has strong flavours, so it is best served with rice (which helps to absorb some of the flavours). I used skinless chicken thighs as I prefer to brown skin-on chicken in a pan first and wanted to save time. It’s up to personal preference. - 3lb (1.4kg) chicken pieces
- 1 packet onion soup mix
- 15oz (425g) can apricot nectar
- 1 teaspoon salt
- ¼ teaspoon pepper
- Combine chicken pieces, onion soup, apricot chicken, salt and pepper in casserole dish.
- Cover, in a moderate oven (375F) for 1½ hours, or until chicken pieces are tender.
- Serve with rice.
